Potato Stuffed Bitter Gourd Fry ( Kakarakaya vepudu)

Roasted Andhra potato stuffed BitterGourd.

Main Ingredients
BitterGourd.
Ingredients
  • Small size BitterGourds
  • Sliced Onion
  • Chopped 4 Green Chillis
  • 1/4 tbsp Turmeric
  • Coreinder leaves
  • Salt to taste
  • 1 tbsp Red chilli powder
  • 1 tbsp Mustard seeds
  • Curry Leaves
  • 1/4 tbsp Cumin seeds(Jeera)
  • 1 tbsp Channa dhal
  • 1 tbsp Urad dhal
  • Potato Pittu
Preparation
  • Split BitterGourd and remove seeds as shown in figure.
  • Stuff Potato Pittu in BitterGourd as shown in figure.
  • Heat the 4 spoons of oil in pan over medium heat.
  • Place Mustrad seeds,Cumin seeds,Curry leaves,Channa Dhal,Urad Dhal in oil fry it for 2min.
  • Place Green Chillis,Onion slices fry untill onion turns Golden Brown color.
  • Place stuffed BitterGourd in pan and fry untill BitterGourd cooked and turn to dark brown color in low flame.
  • Add Coriander leaves.
Tasty BitterGourd fry is ready to have with rice.
