Vankaya Pulusu ( Brinjal Pulusu / Egg Plant Pulusu )
Recipe Description
Delicious curry made of Egg Plant/Brinjal/Vankaya and can eat with Rice,Idly,Roti,Dosa.Main Ingredients
Egg Plant,Tamarind Pulp,Tomatoes .Ingredients
- 1 kg Egg Plants
- 2 Tomatoes
- 1/2 Lemon size Tamarind
- Salt to taste
- 1/4 tbsp Turmeric
- 1 big Onion
- 1 tbsp Mustard seeds
- 1/4 tbsp Cumin seeds
- Curry Leaves
- Coreinder leaves
- 1 tbsp Channa dhal
- 1 tbsp Urad dhal
- 1/4 tbsp Sugar
- 3 tbsp Pulusu powder
Preparation
- Slit Brinjals in to plus space (2 plus) on opposite side of stem.
- Heat 5 tbsp of oil in pan over medium heat.
- Place Mustrad seeds,Cumin seeds,Curry leaves,Onion slices,Channa Dhal,Urad Dhal in oil, fry untill onion turns Golden Brown color.
- Place Tomatoe slices,Salt,Turmeric fry untill no lumbs.
- Place Brinjals cook it untill Brinjal soft or it turns color.
- Place Tamarind pulp,Pinch of Sugar,1 cup water,salt to taste cook for 10 to 15 min in low flame.
- Garnish with Coriander leaves.
Tasty Vankaya Pulusu is ready to eat with Rice or Roti.
